If you have a moment to spare, try a really special coffee - you'll be pleasantly surprised. It's all there in the cup: the flavor and aroma of an espresso from Italy.
"Illy" is not an invented name, it is the surname of a family from Trieste. Open to innovation and possessed a particular entrepreneurial intuition and expertise, the family has become part of coffee history.
It all began with the tenacious, enterprising spirit of one man, Francesco Illy, who established illycaffe in 1933. Always in search of perfection, his painstaking studies were rewarded: in 1935 he invented "illetta," the espresso machine which revolutionized all earlier procedures.
An ingenious intuition, which certainly could not be limited to the few. Francesco Illy dedicated himself to searching for a method (pressurization) that would enable him to distribute a product throughout Italy that would maintain its extraordinary quality intact. The rest is history. From Italy to the rest of the world was a short step.
At First Sight - aroma with closed eyes
Before picking up the cup, ensure that it is no more than half full of espresso coffee; the other half is needed to hold the volatile aromas released by the coffee. Now look at the froth, the indicator of a perfectly extracted coffee.
The color must be light hazel with a brown
streak, it must be compact in consistency
so that the sugar passes through it slowly
and is then covered over by it. If the froth
is too light, the coffee has been under
extracted; an isolated light-colored stain
means that the coffee has been over extracted.
So keep your eyes open before you drink
your coffee. We'll allow you to break the
rules only if it is an Illy coffee. After
all, you can trust real quality with your
eyes closed.
